Abstract:
To provide a trehalose-releasing enzyme for producing trehalose from reducible starch partially decomposed subject and a method for producing the same and to establish the uses thereof.
A novel trehalose-releasing enzyme, the method for producing the same, microorganisms creating the same is disclosed and, the trehalose, a saccharide containing the same, and the composition including the trehalose are constituted from the reducible starch partially decomposed substance by using the trehalose-releasing enzyme and nonreducible saccharide generating enzyme.
