Abstract:
To provide an O/W-type emulsified oil-and-fat composition for roll-in use having good meltability in the mouth and extensibility and provide a pastry product produced by using the composition.
The O/W-type emulsified oil-and-fat composition for roll-in use contains a triacylglycerol expressed by SLOSL (SL is palmitic acid residue, stearic acid residue or arachic acid residue; and O is oleic acid residue) in the oil phase in an amount of ≥35 wt.%.
