Abstract:
PURPOSE: To obtain UME vinegar suitable as an improved alkali healthy food, having alleviated vigorous acidity of UME vinegar of its own, by adding hot spring water of sodium hydrogencarbonate containing a mineral substance to pressed UME juice.
CONSTITUTION: UME is pressed by a proper means, for example, UME is showered with liquid nitrogen, instantly frozen, thawed and pressed by a heavy stone to give pressed juice, which is incorporated with hot spring water of sodium hydrogencarbonate containing a mineral substance, optionally mixed with an additive and a carbonic acid gas is fed to the juice under pressure.
