Abstract:

To provide sweetness by glucose derived from malted rice of Aspergillus awamori of Awamori, to increase a citric acid content and ferulic acid derived from malted rice of Aspergillus awamori of Awamori and to add brown rice and rice bran to a raw material so as to extract various mineral components and various vitamins, protein, amino acid, etc., abundantly contained in brown rice and rice bran in unrefined sake lees after production of Awamori by distilling unrefined sake of Aspergillus awamori or a stock solution of unrefined vinegar obtained by squeezing the unrefined sake lees.

At least ordinary malted rice of Aspergillus awamori and steamed brown rice are added to distillation lees of Awamori or a stock solution of unrefined vinegar obtained by squeezing the distillation lees. Rice bran may be instead of steamed brown rice.
