Abstract:
PROBLEM TO BE SOLVED: To provide a processed product keeping a property of plum having a salt content of 0% by using only the plum as a raw material, concerning a plum processed product.SOLUTION: After drying at a temperature of 65°C or lower, plum is allowed to self-digest, to mature fully, and to ripen forcedly without decay, to thereby newly generate organic acid, then, by using only plum showing high shelf stability as a raw material, a processed plum fruit is provided, which has a salt content of 0%, and contains such a pulp having a water activity of 0.95 or more and a water content less than 85% that its extract has Brix of 7.5 or more.SELECTED DRAWING: None
