To provide an urosolic acid derivative that has excellent collagen-increasing action with weak side effect and provide food preparation, cosmetics and antiinflammatory agent therefrom.

The urosolic derivatives are prepared by allowing urosolic acid to combine through an ester linkage to at least one selected from the following compounds consisting of betaine, γ-aminobutyric acid, gallic acid, eicosapentanoic acid, cinnamic acid, p-coumaric acid. The urosolic derivatives also can be obtained by allowing pulverized persimmon leaf to react with betaine, γ-aminobutanoic acid and gallic acid in the presence of a lipase as a transesterification catalyst followed by alkaline reduction. Further, the urosolic derivative can be obtained by allowing pulverized rosemary, betaine and pulverized soybean powder to be fermented by using Bacillus natto and the product is subjected to alkaline reduction. The food preparation, cosmetics and the antiinflammatory agent each include the urosolic acid derivative.
