The vegetable-drying apparatus 1 for drying vegetables with overheated steam and hot air includes: a drying container 3 having an opening or closing door for putting in or out the vegetables, a vegetable-putting member 7 provided in the drying container 3 so that racks 15 used as vegetable-putting portions for putting vegetables are rotated on a vertical shaft, an overheated steam-supplying means 9 for supplying overheated steam to the rotation area 16 of the racks 15 inside the drying container 3, a hot air-supplying means 11 for supplying hot air to the rotation areas 16 of the racks 15 inside the drying container 3, and an exhausting means for exhausting from the drying container 3.
