Abstract:

PROBLEM TO BE SOLVED: To produce the subject isolated substance capable of recovering isoflavone in a high ratio because the isoflavone is contained in the form of an aglucone having a low solubility by abundantly including genistein which is an aglucone isoflavone without glucone bonded thereto.
SOLUTION: This isolated substance has at least 1.5 mg/g genistein content based on the dry weight, preferably about 1.5 to about 3.5 mg/g genistein content and about 1.0 to about 3.0 mg/g daidzein content respectively based on the dry weight. The objective isolated substance is preferably obtained by subjecting a vegetable proteinaceous material containing a glucone isoflavone to an extraction treatment with an aqueous extracting agent having a higher pH than the isoelectric point of the material, then reacting a β-glucosidase enzyme with the resultant extract and converting the glucone isoflavone into the aglucone isoflavone. A soybean flake freed of an oil by solvent extraction is preferred as the material. In this case, the pH of the aqueous extracting agent is preferably 6.7-9.7.
