Abstract:

PURPOSE: To effect sufficient venting and kneading of the noodle dough following the gluten formation by leading the dough fed from the inlet 8 through inclined holes into the venting and kneading chamber equipped with kneading pins and sending it to the dough extrusion plate by mean of a screw.
CONSTITUTION: The noodle dough charged from the inlet 8 is allowed to pass through inclined holes 16 by means of a screw 10 to form gluten and led to the venting and kneading chamber equipped with kneading pins 32. Screw 36 is used to send the dough to the dough extrusion plate 46 having inclined holes 44 for passing the dough. The unit 40 effects the venting near the intermediate diaphragm 20 to enable effective venting and kneading in a relatively short time before the gluten is decomposed.
