Abstract:

PURPOSE: To prepare a vinegar having mitigated irritant smell and taste of acetic acid in spite of high acidity, having excellent taste and flavor and suitable as a drink, by carrying out the acetic acid fermentation of an alcohol-containing liquid having a sugar content adjusted within a specific range.

CONSTITUTION: An alcohol-containing liquid having a sugar concentration of 10W30% is prepared by adding a sugar or supplying additional sugar to the liquid. The liquid is subjected to the acetic acid fermentation to obtain the objective vinegar for drink having an acidity of ≥2.0%, preferably 2.0W5.0%, a sugar content of 10W30%, preferably 15W20%, and an extract component content of 16W40%, preferably 20W35%.
