Abstract:
PROBLEM TO BE SOLVED: To manufacture a small amount of vinegar without requiring trouble nor costs.SOLUTION: A bamboo cylindrical container 1 as a vinegar manufacturing material has a carrier having a carrying face 4 with many fine voids on a surface, and is manufactured by dropping seed vinegar 5 consisting of a fermentation liquid containing acetic bacterium or diluted fermentation liquid to the carrying surface 4 and the drying them under environment at less than dew point temperature that dew condensation is started. It is a fermentation liquid containing inoculum which becomes a seed for fermentation. The carrying surface 4 is formed on an inner surface of the bamboo cylindrical container 1. When alcohol beverage 6 with alcohol content of 3 to 5 degree is input in the bamboo cylindrical container 1 for example, the carrying face 4 contacts with the alcoholic beverage 6, and when 5 to 10 days pass at the state, vinegar is manufactured by acetylation of the alcohol with actions of acetic bacterium living on the carrying face 4.SELECTED DRAWING: Figure 1
