Abstract:

To provide vinegar rich in total amino acid content, rich in γ-aminobutyric acid content as well, high in antioxidative power, contributing to health promotion and good in deliciousness, and to provide a method for producing the same.

The vinegar is obtained by the following steps: steaming germinated unpolished rice obtained by soaking unpolished rice in water to prepare steamed rice; steaming soybeans to prepare steamed soybeans; and charging the steamed rice and the steamed soybeans in a vessel followed by conducting saccharification, alcoholic fermentation, and acetic acid fermentation.
