Abstract:

PROBLEM TO BE SOLVED: To provide vinegar for Sushi, obtained by formulating vinegar obtained by using bran of polished rice skin, generated as a byproduct at the production of a wash-free rice, and having peculiar flavor.
SOLUTION: The vinegar for the Sushi is obtained by formulating the vinegar obtained by using the bran of the polished rice skin as a raw material. The vinegar for the Sushi is preferably obtained by alcohol-fermenting an alcohol-containing liquid obtained by adding the alcohol to a saccharified liquid obtained by using the bran as a raw material, or an alcohol-containing liquid obtained by subjecting the saccharified liquid to an alcohol fermentation, and subjecting the alcohol-fermented product to an acetic acid fermentation. In another embodiment, the vinegar for the Sushi is obtained by adding the saccharified liquid obtained by using the bran as the raw material, or an alcohol-containing liquid obtained by subjecting the saccharified liquid to the alcohol fermentation, to the vinegar after finishing an acetic acid fermentation or maturation in the production of the vinegar by a conventional method.
