To achieve efficient cooling, to increase yield in a subsequent vacuum cooling, to improve flavor and mouthfeel, and to reduce variation of cooling temperature.
A wagon 1 comprises a vertical shelf boards 3, wheels 4 arranged in a bottom, a water supply port 7 for supplying to hollow parts inside the shelf boards 3 and a water discharge port 8 for discharging from the hollow parts. A circulation device 9 of cooling water 6 can be connected to the water supply port 7 and the water discharge port 8. A chiller 11 of the circulation device 9 keeps a temperature of the cooling water supplied to the water supply port 7 at a set temperature. Removable connecting tools 17 are provided for connecting between the water supply port 7 and the circulation device 9, and between the water discharge port 8 and the circulation device 9. After steam cooking or after steam cooking and cooling, and before vacuum cooling, the cooling water flows in the wagon 1 so as to cool food 22.
