Abstract:

PROBLEM TO BE SOLVED: To keep cooked rice with good taste under a warm temperature for a long time, by elevating a low temperature higher than a low warming temperature in a previous process to suppress yellowing and degradation of cooked rice by high temperature warming and multiplication of putrefying bacteria by low temperature warming.
SOLUTION: When rice cooking is completed at t0, the cooked rice in an inner pan is kept at an ordinary warming temperature, for instance 72°. A part of the cooked rice is eaten at the time and a selection switch is turned on at t1 to move to sleeping warming. Degradation of the cooked rice is prevented by warming for 6 hours at a low warming temperature of 60°C. Following that, warming is performed for 6 hours at 74°C, a temperature higher than the previous ordinary warming temperature. After that, law temperature warming is carried out for 6 hours at 62°C, a temperature higher than the previous low temperature warming, and ordinary temperature warming is further carried out at 76°C, a temperature higher than the previous ordinary warming temperature. Long time warming can be performed by repeating keeping at a warming temperature higher than the previous warming temperature like this to suppress excessive drying, yellowing and odor generating of cooked rice.
