Abstract:

PROBLEM TO BE SOLVED: To obtain the subject water capable of affording cooked rice excellent in appearance, flavor and palate feeling, in particular even after long-term storage of such cooked rice by heat treatment of water treated in electric field.
SOLUTION: This water for cooking rice is obtained by heat treatment pref. at 60-170°C of water treated in electric field. It is preferable that this water is used in either one process, rice immersion or heating process, and water treated in electric field is used in the other process. By the way, the cooked rice obtained using the above water is preferably intended for long-term storage.
