Abstract:
To obtain a water-in-oil emulsified composition suppressed in separation of water at the time of preparing the water-in-oil emulsified composition and having an oil phase of high SFC (specific fuel consumption).
This water-in-oil emulsified composition contains oil and fat and water. The oil phase of high SFC comprises a diglyceride whose two constituent fatty acids are both ≥16C saturated fatty acid, and the SFC of the oil phase at 20°C is in the range of 24-70. A method for producing the water-in-oil emulsified composition is provided. Heated wheat flour food using the water-in-oil emulsified composition is also provided.
