Abstract:
PROBLEM TO BE SOLVED: To provide a water-in-oil type emulsified fat composition with plasticity having an excellent milk flavor with rich taste and no harsh taste; and a bakery product having an excellent milk flavor with rich taste and no harsh taste, using the water-in-oil type emulsified fat composition with plasticity.SOLUTION: The water-in-oil type emulsified fat composition with plasticity includes the following components (A), (B) and (C) as solid contents with a mass ratio of 20 to 60:30 to 70:2.5 to 12, (where, (A)+(B)+(C)=100), containing no casein protein; and the bakery product uses the water-in-oil type emulsified fat composition with plasticity: (A) whey protein, (B) lactose, and (C) whey mineral.
