Abstract:

To obtain the subject composition excellent in stability and also good in spreadability when applied to margarine or the like.

This composition is composed of an aqueous phase based on water and an oily phase which comprises ≥40 wt.% but <95 wt.% diglyceride and ≥5 wt.% but <60 wt.% triglyceride and also satisfies the requirements described below: (1) the composition in the diglyceride is as follows: SS: ≥0.5 wt.% but <20 wt.%, SU: ≥20 wt.% but <55 wt.% and UU: ≥25 wt.% but <70 wt.% (wherein, S: a 14-22C saturated fatty acid residue; U: a 14-22C unsaturated fatty acid residue) and (2) the weight ratio (14C+16C)/(18C+20C+22 C) for the saturated fatty acid residues constituting the diglyceride is 1.0-8.0.
