Abstract:
To provide water-insoluble protein powder comprising powdered protein, enabling easy addition of protein to food without changing taste inherent in the food.
The water-insoluble protein powder is tasteless and is obtained through gelatinizing protein solution into hard one followed by drying the gelatinized protein solution, and pulverizing the dried solution. A method for producing the tasteless water-insoluble protein powder comprises gelatinizing protein solution into hard one followed by drying the gelatinized protein solution, and pulverizing the dried solution.
