Abstract:
To provide wheat flour that is rich in nutrition and taste without green wheat bran smell and to obtain a wheat flour composition that is rich in nutrition and taste and has excellent secondary workability.
The wheat flour having an average particle size of 150 to 230 μm and an ash content of 0.8 to 1.2 % and the wheat flour composition containing the wheat flour in an amount of 5 to 40 % wt. are provided.
