Abstract:

PROBLEM TO BE SOLVED: To provide a glutinous wheat starch having stable viscosity.
SOLUTION: This wheat starch and a food containing the starch exhibit the maximum viscosity at 75-85°C and have an amylose content of ≥0.8% and <2.5%.
