Abstract:
PROBLEM TO BE SOLVED: To provide a wheat puffed food suppressing top sinking, cave-in at puffing, or contraction along time elapse after puffing, with a voluminous feeling and a light and soft texture while preventing a flavor from deteriorating.SOLUTION: A wheat puffed food includes a cellulose formulation, and has a density less than 0.30 g/cm, an indentation distance of 13 mm or more at an indentation load over 10 N, and a maximum indentation load of 55 N or less. A mixed amount of the cellulose formulation is 0.1-5 mass% or less by solid content conversion. An average particle diameter of the cellulose formulation is 15 μm or more. The cellulose formulation is powdered cellulose or crystal cellulose powder.SELECTED DRAWING: None
