PURPOSE: To simply, inexpensively and efficiently obtain the prepared material in which excess threonine content in a raw material whey is reduced to proper level by subjecting the raw material whey to heat treatment under specific conditions and removing the aggregated protein.
CONSTITUTION: Raw material whey (preferably cheese whey or rennet whey) is subjected to heat treatment under conditions in which 15-40% of total protein in raw material whey is insolubilized at pH4.6±0.1 and ≥70°C, preferably at 70-95°C. Then, the aggregated protein is removed, e.g. using a membrane filter to provide the objective prepared material, preferably having a threonine content in the amino acid composition reduced to 5-6wt.%. Furthermore, the above heating is preferably carried out for 15sec to 5min. An ultrafilter membrane, etc., having 20000-500000 dalton fractional molecular weight is used as the membrane filter.
