Abstract:

PURPOSE: To produce whipping cream powder having excellent whipping properties and shape retention, smooth texture after topping and good melt in the mouth by blending whipping cream powder with chitosan.

CONSTITUTION: An oil phase part such as fats and oils and a water phase part such as casein or saccharide are previously emulsified to give whipping cream powder, which is mixed with about 0.02-0.12wt.% solubilized chitosan and homogenized to form an emulsion. Then the emulsion is sterilized, concentrated and dried by a conventional procedure.
