Abstract:

To provide a method for producing a whole-grain cereal powder by which the whole-grain cereal powder is efficiently produced, and to provide a whole-grain cereal powder with which tasty food can be produced.

The method for producing a whole-grain cereal powder comprises adding water to ear tips of caryopsis selected from a group comprising wheat, rye and rye wheat followed by drying the ear tips of caryopsis so as to have 11 mass% of the moisture content of bran, and pulverizing the dried ear tips of caryopsis. The whole-grain cereal powder is produced by passing 100 mass% of the whole-grain cereal powder through a sieve having 450 m openings, and passing 96 mass% of the whole-grain cereal powder through a sieve having 250 m openings. The food comprises the whole-grain cereal powder.
