This high-quality xanthin lake pigment dispersion is prepared by dispersing a xanthin lake pigment in the presence of an acidic electrolyzed water, and obtained by treating, with an acidic electrolyzed water, a dispersion or its precipitate formed by adding a polyvalent metal compound in an aqueous solution of the extract from the tissue of rubiaceae or its cultured cell and laking, or by laking adding a polyvalent metal compound to the solution extracted from the tissue of rubiaceae or its cultured cell by an acidic electrolyzed water.
