Abstract:
PURPOSE: To obtain a yeast of the genus Saccharomyces, useful for producing beer, etc., reducing the production amount of hydrogen sulfide, improved in quality and further capable of shortening the period for after-fermentation and SAKE storage by transducing a promoter, etc., for a structural gene capable of carrying out the constitutional expression thereinto.
CONSTITUTION: This yeast of the genus Saccharomyces is obtained by transducing a promoter for a structural gene capable of carrying out the constitutional expression such as a promoter for glyceroaldehyde-3-phosphate dehydrogenase (GAPDH) gene or a promoter for 3-phosphoglycerotokinase (PGK) gene and the structural gene (MET25) of O-acetylhomoserine sulfhydrylase under the control of the promoter thereinto. The method for producing beer is to preferably use this yeast.
