Abstract:

PURPOSE: To obtain a new yeast, having a high ability to produce acid and high productivity of a nucleic acid-related substance by carrying out the variation inducing treatment of Saccharomyces cerevisiae for brewing and releasing or reducing the feedback control over a purine biosynthetic pathway.

CONSTITUTION: This yeast released or reduced in the feedback control such as 7H6-PF1 strain (FERM P-13899) is obtained by carrying out the variation inducing treatment of Saccharomyces cerevisiae for brewing (e.g. rice wire (SAKE) yeast KYOKAI No. 7 and its haploid strain). Thereby, fumaric acid is mass-produced in a purine biosynthetic pathway to increase the production of malic acid or succinic acid. As a result, a brewed liquor containing an increased production of a nucleic acid-related substance is obtained.
