PROBLEM TO BE SOLVED: To provide an anthocyanin stabilizer exhibiting excellent enhancing effect of stability of anthocyanin and an anthocyanin-containing composition containing the same and a stabilization method of anthocyanin.SOLUTION: An anthocyanin stabilizer for adding to an anthocyanin-containing composition contains histidine as an active ingredient and a stabilization effect thereof is enhanced by adding histidine with a mass ratio in a range of 0.001 to 1.0 and/or ascorbic acid with a mass ratio in a range of 0.001 to 0.05 to anthocyanin.SELECTED DRAWING: Figure 1
