Abstract:
The procedure consists of determining a temperature value for articles (P) leaving a cooling chamber (2) or tunnel of a plant used e.g. for deep freezing food products, determining the initial operating parameters of the plant, predicting the temperature of articles leaving the chamber and modifying the operating parameters when the difference in the predicted and actual temperatures is greater than a set amount during a test cycle. The temperature prediction stage of the procedure is carried out using the operating parameters of the chamber, the thermodynamic and physical characteristics of the chamber, and the thermodynamic and physical characteristics of the articles.
