Abstract:
PURPOSE:To enhance resistance to salt solution of oil-in-water type emulsion by blending an emulsifier in which citric monoglyceride and succinic monoglyceride are combinedly used with polyglycerin condensation ricinolein acid ester. CONSTITUTION:An emulsifier in which citric monoglyceride and/or succinic monoglyceride (emulsifier B) are combinedly used is blended with polyglycerin condensation ricinolein acid ester (emulsifier A) and emulsified components such as oil and fat, table salt, protein and the like are blended and an oil-in- water type emulsion is prepared. Then, said preliminary emulsion is uniformly emulsified with a homogenizer or the like and an oil-in-water type emulsified material with resistance to bases is prepared. The suitable volume of said emulsifier to be used is 1/30 (weight ratio)-1/2 or less of the whole volume of hydrophilic emulsifier mainly constituted of the emulsifier B.
