Abstract:
PROBLEM TO BE SOLVED: To provide a method for manufacturing instant dried porridge containing grain as main raw materials with simplified processes at lower cost than usual.SOLUTION: There are provided a method for manufacturing instant dried porridge containing grain as main raw materials including a process of cooking porridge by adding an enzyme for hydrolysis of α-1,4-glycosidic linkage and milled grain to water for rice cooking heated at 90°C or more and a process of lyophilization of cooked porridge, and instant dried porridge obtained by the method.SELECTED DRAWING: None
