Abstract:
To provide a fibrous cheese which achieves a soft texture since a first mouthful, and which can easily get loose.SOLUTION: A fibrous cheese is configured so that, a compression elasticity modulus at 5°C is 100 kPa or greater and 300 kPa or smaller, and a proportional limit is 130 kPa or smaller. The compression elasticity modulus at 5°C is preferably, 100 kPa or greater and 290 kPa or smaller, more preferably, 100 kPa or greater and 280 kPa or smaller, and further preferably, 100 kPa or greater and 270 kPa or smaller. The compression elasticity modulus at the same temperature is more further preferably, 100 kPa or greater and 260 kPa or smaller.SELECTED DRAWING: Figure 1
