Abstract:
PROBLEM TO BE SOLVED: To provide a soybean flavor imparting agent capable of imparting or enhancing the flavor and richness inherent to soybeans with the thick taste of beans, allowing food products made from raw material soybeans to have an enhanced flavor inherent to soybeans, so that tasty soybean food products can be provided.SOLUTION: A composition including soybean milk of which the fat component is treated with lipase, a composition including the above-described composition to which a specified amount of edible vegetable oil is added, or a composition including soybean milk to which a specified amount of edible vegetable oil is added in advance so as to be treated with lipase is used as the soybean flavor imparting agent. The addition of the soybean flavor imparting agent to food products made from raw material soybeans allows the flavor, richness, and thick taste inherent to soybeans to be imparted or enhanced. Further, the addition of salt in the reaction for lipase treatment suppresses microbial growth during the enzyme reaction and storage of the product.
