Abstract:
The present invention relates to the production of a food product (7) comprising a semi-processed product (1) and a filling (8). The semi-processed product consists of a single whole piece of dough formed into a goblet-like shape having an opening (5) and a cavity (4), partially cooked at a temperature of between 180°C and 250°C. The method envisages to insert a filling (8) into the cavity (4) through said opening (5), to cook the semi-processed product with the filling therein at a temperature of 30°C to 100°C above the temperature for partially cooking the semi-processed product (1) and to cool down the resulting finished food product (7). The invention also comprises an apparatus for the implementation of this method.
