Abstract:

PURPOSE: To efficiently obtain liquors in high yield at a low cost by inoculating Saccharomyces.cerevisiae BAW-6 into a culture medium for fermentation and carrying out the alcoholic fermentation.
CONSTITUTION: Saccharomyces.cerevisiae BAW-6 (FERM P-12871) is inoculated into a culture medium for fermentation and subjected to the alcoholic fermentation at 10-40°C temperature to afford the objective liquors.
