Abstract:

To provide a method for efficiently producing vinegar containing acetic acid in high concentration in a short time.

There are provided a DNA encoding a protein having a proliferation-promoting function of acetic acid bacterium in the presence of high concentration acetic acid, a recombinant vector containing the DNA, a transformant containing the recombinant vector, a microorganism enhanced in the proliferation-promoting function in the presence of acetic acid owing to copy number amplification in cells of the DNA, and a method for producing vinegar by culturing the microorganism in an alcohol-containing medium and producing and accumulating acetic acid in the medium.
