PROBLEM TO BE SOLVED: To provide processed ginger which shogaol is enriched.SOLUTION: As for processed ginger which shogaol is enriched, not less than 6.0 mg of 6-shogaol is contained in 1 g of the processed ginger (not less than 600 mg/100 g), ratio of the content (6S/6G) of 6-shogaol (S) for 6-gingerol (G) is not less than 2, and water content is not more than 30 mass%.SELECTED DRAWING: None
