Abstract:
PROBLEM TO BE SOLVED: To provide an immature persimmon fruit powder composition using an immature persimmon fruit "green persimmon" as a raw material, and a method for manufacturing the composition.SOLUTION: There is provided an immature persimmon fruit powder composition and a method of manufacturing thereof in which an immature persimmon fruit (persimmon fruit referred to as "green persimmon" picked sometime between blooming and 2 weeks before ripening) is preserved in a frozen state as soon as possible after harvesting, then a calyx part is removed in a half-thawed state, the immature persimmon fruit from which the calyx part was removed is cut into divided block pieces in the state of including fruit peels, the immature persimmon fruit pieces in the half-thawed state which are cut into the divided block pieces are irradiated with far-infrared ray, infrared ray, and ultraviolet ray, dried while being sterilized by using a forced-air dryer through which warm air or cool air circulates in a condition close to drying in the sun, a water component contained in the immature persimmon fruit pieces is removed, and then the dried immature persimmon fruit pieces are crushed into an immature persimmon fruit powder composition.SELECTED DRAWING: Figure 8
