Abstract:

PURPOSE:To obtain the title starter having excellent antimicrobial action and germicidal action by adding chitin, etc., and a plant fibrous material to a culture mixture of lactic acid bacteria having resistance to chitin or chitosan. CONSTITUTION:Chitin or chitosan and a plant fibrous material (e.g. unhulled rice or bran) are added to a culture mixture of one or more lactic acid bacteria selected from lactobacillus casei, L. plantarum, L. brevis, Staphylococcus faecalis, Leuc. mesenteroides, Pediococcus cerevisiae to give the objective stater. A silage raw material is mixed with the starter in an amount to give 10<3>-10<7> CFU/g lactic acid bacteria and subjected to lactic acid fermentation under an aerobic condition to give a high-quality silage.
