PROBLEM TO BE SOLVED: To provide a manufacturing method of alkyl cellulose having high viscosity and not excessively high gel strength.SOLUTION: There is provided a manufacturing method of alkyl cellulose including at least a process for stirring and mixing a cellulose pulp and a first alkali metal hydroxide solution to obtain alkali cellulose, a process for reacting the alkali cellulose and an alkylating agent to obtain a first reaction mixture, a process for blending a second alkali metal hydroxide solution to the first reaction mixture and stirring and mixing the same without blending the alkylating agent to obtain a second reaction mixture, and a process for purifying the second reaction mixture to obtain alkyl cellulose. There is provided alkyl cellulose obtained by the manufacturing method and having substitution degree of alkyl groups of 27 to 33 mass%.SELECTED DRAWING: None
