Abstract:
PROBLEM TO BE SOLVED: To provide a manufacturing method of cooked rice capable of quality improvement such as improvement of texture and surface glazing of cooked rice reduction of weight, prevention of refrigeration failure and reduction of odor without providing complication of processes.SOLUTION: There is provided a manufacturing method of cooked rice by adding alkaline electrolytic water in a water addition process, wherein an added amount of the alkaline electrolytic water is 0.1 to 4.0 wt.% based on an amount of raw rice. Preferably the added amount of the alkaline electrolytic water is 0.20 to 0.50 wt.% based on total water addition amount and pH (25°C) of the alkaline electrolytic water is 11.0 to 13.0.SELECTED DRAWING: Figure 1
