Abstract:
PROBLEM TO BE SOLVED: To provide dried fish containing an abundant extract content and having thick deliciousness.SOLUTION: A method for producing dried fish includes a heating step of heating raw material fish meat for dried fish from the surface, and a roasting step of roasting the fish meat passing the heating step. In more details, the method for producing dried fish includes keeping a surface temperature of the fish meat at 80°C or more in the heating step, and heating for 1-20 minutes while keeping a central temperature of the fish meat at less than 10°C. There is also provided dried fish which has a lactic acid content of 3600 mg/100 g or more, an isolation glutamic acid content of 65 mg/100 g or more, and an inosinic acid content of 100 mg/100 g or more.SELECTED DRAWING: None
