Abstract:
SOLUTION: Provided is a method for producing long chain polyunsaturated fatty acid-containing fat having a water content of 3 wt% or less, comprising a contact treatment step by rosemary.EFFECT: The method provides long chain polyunsaturated fatty acid-containing fat having improved oxidation stability and a good flavor. Thus, there can be provided long chain polyunsaturated fatty acid-containing fat having superiority in terms of health at a lower cost than before by suppressing the occurrence of a reversion flavor, an unpleasant odor, and peroxides that are harmful for health. The oxidation stability can be improved further by adding a relatively small amount of antioxidant.SELECTED DRAWING: None
