Abstract:
To easily produce persimmon paste having a persimmon flavor and color and a smooth texture from persimmon skin of an astringent persimmon as a main raw material, and real persimmon ice cream made of the paste.SOLUTION: A production method of persimmon paste includes a persimmon skin sulfur fumigation step S20 for fumigating persimmon skin using a fumigant containing a sulfur component, a persimmon skin drying step S30 for drying the persimmon skin, a persimmon skin immersion step S50 for letting the persimmon skin contain moisture by immersing the persimmon skin in water, a first agitation step S60 for adding a predetermined amount of water and an antioxidative additive to the persimmon skin and agitating the immersed persimmon skin while crushing to obtain the persimmon paste at a first state, a second agitation step S70 for adding saccharide to the persimmon paste at a first state and agitating while heating to obtain the persimmon paste at a second state, a cooling step S80 for cooling the persimmon paste at a second state to room temperature to obtain the persimmon paste at a third state, and a sealing and packaging step S90 for taking the persimmon paste at a third state in a packaging container and sealing, in that order.SELECTED DRAWING: Figure 1
