Abstract:
PROBLEM TO BE SOLVED: To provide a process for producing a retort porridge that is easy to swallow and in which the original taste of rice can be felt.SOLUTION: The process for producing retort porridge is a process for producing retort porridge comprising: a rice cooking step of cooking non-crushed rice; a pasting step of converting the cooked rice into a paste; a retort sterilization step of retort sterilizing the pasted rice; and a mixing step of mixing a thickener in any of the above steps, and in which said thickener is 1 kind or 2 or more kinds selected from native gellan gum, de-acyl gellan gum, carrageenan, LM pectin, sodium alginate, agar, locust bean gum, guar gum, tamarind seed gum and psyllium seed gum, and the hardness is 7000 N/mor less.SELECTED DRAWING: None
