Abstract:
The procedure for complete conditioning of brewing grains from barley malt, comprises peeling the brewing grains, homogeneous moistening cereal grains to a moisture content up to 20%, sticking out and dry- and/or wet milling the brewing grain. The wetting and sticking out of the grains take place in two steps. The conditioned brewing grains are coarsely ground twice without intermediate shifting. The interval time per stage is maximum 30 minutes. The brewing grains are slowly humidified through moist air. The relative air humidity is variable.
