Abstract:
PROBLEM TO BE SOLVED: To provide a mixture for doughnut which can produce doughnuts having good texture as compared favourably with foreign wheat flour even though it is made with domestic wheat flour.SOLUTION: The mixture for doughnut of the present invention includes domestic wheat flour and a preferable content thereof is 50-65 mass%. Furthermore, the mixture for doughnut preferably includes heat treatment domestic wheat flour with heat treated domestically produced wheat flour and a preferable content thereof is 5-30 mass%. Also, the mixture for doughnut can include modified starch, saccharide, and emulsifier.SELECTED DRAWING: None
