Abstract:
PROBLEM TO BE SOLVED: To provide a noodle string adhesion preventing agent for a noodle-like gelatinous food, which suppresses adhesion of noodle strings of a noodle-like gelatinous food, and a noodle-like gelatinous food containing the same.SOLUTION: Whey protein is used as a noodle string adhesion preventing agent for a noodle-like gelatinous food which substantially contains no wheat flour. A noodle-like gelatinous food which contains glucomannan, thickening polysaccharide excluding glucomannan, whey protein, and common salt is provided. Besides whey protein, one or more kinds of milk raw materials selected from cheese, butter, cream, condensed milk, powdered milk and casein may be contained. The thickening polysaccharide is preferably one or more kinds selected from carrageenan, locust bean gum and xanthan gum.SELECTED DRAWING: None
